157|37 take down 50/50 Honesuki
The Honesuki is a Japanese boning knife which is mostly used for prepping poultry but can be used for various other tasks around the kitchen as well. This knife’s monosteel blade is hand forged from 1.2442 tungsten-carbon steel, with a symmetrical grind, which makes it suitable for either left or right hand use.
The blade is forged with a relatively thick spine to achieve the desired stiffness, which is common for this type of knife. Due to the thick spine, in combination with a relatively low blade profile, the bevels are rather wide angled, which gives the fine edge the necessary stability for working around bones and alike.
The take down handle is made from durable black Juma® composite material with GripX™ inlays for a bit of extra grip in the front section. The 2-piece front and end caps are made from bronze with titanium inlays and hidden MFG date engraving.
