210|55 Pro Cut Gyuto

A mid size Gyuto with a rather fine blade geometry, hand forged from “Pops Pro Cut” Tungsten-carbon steel.

As has been customary lately for most of my knives, this blade features hollow forged sides which, in combination with an overall thinly, precision forged geometry with a rapidly tapering spine, for achieving great cutting abilities and an agile handling with a low overall weight.

The spine thickness is reduced from 4.5mm at the handle to just 1.8mm already halfway through its length and tapers further towards the tip. Overall, it's a light, fine blade which shouldn’t be used for very rough work but is still durable enough for most tasks.

The blade bevels are ground convex to a fine edge which bends over a fingernail on the entire length. With an extra fine* Walkschliff-Geometry at the tip area and a smooth, acid washed Random-Orbital-Finish, which I tried for the first time on this particular blade.

The take down handle is made from a beautiful piece of Mulga wood, combined with beed blasted stainless steel front and end caps. The widened front section of the handle adds a bit of extra volume for more comfort in the pinch grip position.
